Chicken Pesto Pasta

chicken breast, sliced 1 lb
olive oil 1 tbsp
salt 1 tsp
Black pepper to taste
basil pesto 3/4 cup
pasta water 1/3 cup
Parmesan (optional) to taste
Method
1 COOKCook pasta; reserve pasta water.
2 SEARSear chicken in oil with salt and pepper until cooked through; slice.
3 TOSSToss pasta with pesto and pasta water; top with chicken.

  • 1 tsp salt

  • 3/4 cup basil pesto
  • 1/3 cup pasta water
  • to taste Parmesan (optional)

Method

  1. Cook pasta; reserve pasta water.
  2. Sear chicken in oil with salt and pepper until cooked through; slice.
  3. Toss pasta with pesto and pasta water; top with chicken.
