Chicken Pink Pasta with Broccoli

spaghetti 12 oz
Salted water, for boiling to taste
chicken breast, sliced 1 lb
olive oil 1 tbsp
salt 1/2 tsp
Black pepper to taste
broccoli florets 3 cups
olive oil 2 tbsp
onion, finely diced 1/2
garlic, minced 2 cloves
tomato paste 2 tbsp
crushed tomatoes 1 can / (1/4 oz)
cream 1 cup
salt 1 tsp
Grated Parmesan (optional) to taste
Fresh basil or parsley (optional) to taste
Method
1 COOKCook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.
2 SEARSear chicken in olive oil with salt and pepper until cooked through; set aside.
3 BLANCHBlanch broccoli 2 minutes or sauté until crisp-tender; add to pasta.
4 SAUTÉSauté onion in oil 5 minutes; add garlic 30 seconds.
5 STIRStir in tomato paste 2 minutes.
6 ADDAdd tomatoes and salt; simmer 8 minutes.
7 STIRStir in cream; simmer 2 minutes.
8 TOSSToss drained pasta with sauce, loosening with pasta water as needed.
9 SERVEServe warm; top with Parmesan and herbs if desired.

  • 1 can / (1/4 oz) crushed tomatoes
  • 1 cup cream
  • 1 tsp salt
  • to taste Grated Parmesan (optional)
  • to taste Fresh basil or parsley (optional)

Method

  1. Cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.
  2. Sear chicken in olive oil with salt and pepper until cooked through; set aside.
  3. Blanch broccoli 2 minutes or sauté until crisp-tender; add to pasta.
  4. Sauté onion in oil 5 minutes; add garlic 30 seconds.
  5. Stir in tomato paste 2 minutes.
  6. Add tomatoes and salt; simmer 8 minutes.
  7. Stir in cream; simmer 2 minutes.
  8. Toss drained pasta with sauce, loosening with pasta water as needed.
  9. Serve warm; top with Parmesan and herbs if desired.
