Coconut Curry Noodles
A delicious coconut curry noodles recipe
Ingredients
- 10 oz rice noodles
- 1 tbsp oil
- 2 tbsp red curry paste
- 1 can coconut milk
- 1 cup broth
- 1 tbsp soy sauce (or fish sauce)
- 1 tsp sugar
- 2 cups vegetables (bell pepper, spinach, etc.)
- to taste Lime and cilantro
Method
- Soak or cook rice noodles per package; drain.
- Fry curry paste in oil 1 minute.
- Add coconut milk and broth; simmer 5 minutes.
- Add vegetables and cook until tender; season with soy/fish sauce and sugar.
- Toss in noodles; finish with lime and cilantro.
