Cottage Cheese Flatbread (Garlic Parmesan)
Serve with salad or use as a pizza crust.
Ingredients
- 1 cup cottage cheese
- 2 eggs (or 1/2 cup egg whites + 1 egg)
- 1/2 tsp salt
- 1/2 tsp garlic powder (optional)
- 1/4 cup grated Parmesan
Method
- Heat oven to 375°F. Line a sheet pan with parchment.
- Blend cottage cheese and eggs until smooth.
- Stir in salt (and garlic powder).
- Pour batter into a thin oval/rectangle on the parchment.
- Sprinkle Parmesan on top for the last 5 minutes of baking.
- Bake 25–30 minutes until set and lightly golden.
- Cool 5 minutes before using as a wrap, flatbread, or pizza base.
