Garlic Confit Pasta

garlic 6 cloves
olive oil 1/3 cup
salt 1/2 tsp
Black pepper to taste
grated Parmesan 1/3 cup
Lemon zest (optional) to taste
Parsley to taste
Method
1 SIMMERSimmer garlic cloves in olive oil over low heat 12–15 minutes until soft (do not brown).
2 COOKCook pasta; reserve pasta water.
3 MASHMash garlic into oil; toss with pasta and a splash of pasta water.
4 SEASONSeason and top with Parmesan, parsley, and lemon zest.
