Garlic Confit Pasta
Reserve pasta water; it's the secret to glossy sauces.
Ingredients
- 12 oz spaghetti
- 6 cloves garlic
- 1/3 cup olive oil
- 1/2 tsp salt
- to taste Black pepper
- 1/3 cup grated Parmesan
- to taste Lemon zest (optional)
- to taste Parsley
Method
- Simmer garlic cloves in olive oil over low heat 12–15 minutes until soft (do not brown).
- Cook pasta; reserve pasta water.
- Mash garlic into oil; toss with pasta and a splash of pasta water.
- Season and top with Parmesan, parsley, and lemon zest.
