Instant Pot Chicken and Rice
Rinse rice to reduce foaming and get fluffier results.
Ingredients
- 1 tbsp oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1.5 lb chicken thighs, cubed
- 1 tsp salt
- 1 tsp paprika
- 1 1/2 cups long-grain rice, rinsed
- 2 1/2 cups broth
- 1 cup frozen peas (optional)
Method
- Set Instant Pot to sauté; cook onion 3 minutes; add garlic 30 seconds.
- Add chicken, salt, and paprika; sauté 2 minutes.
- Stir in rinsed rice and broth.
- Pressure cook on High for 8 minutes; natural release 10 minutes, then quick release.
- Fluff; stir in peas to warm through.
