Instant Pot Mexican Rice and Beans
A delicious instant pot mexican rice recipe
Ingredients
- 1 tbsp oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups long-grain rice, rinsed
- 1 can black beans, drained
- 1 cup salsa
- 3 cups broth
- 1 tsp cumin
- 1 tsp salt
- to taste Cilantro and lime
Method
- Sauté onion in oil 3 minutes; add garlic 30 seconds.
- Stir in rice, beans, salsa, broth, cumin, and salt.
- Pressure cook on High 8 minutes; natural release 10 minutes.
- Fluff and finish with cilantro and lime.
