Kimchi Fried Rice

day-old cooked rice 3 cups
chopped kimchi 1 cup
kimchi juice (optional) 2 tbsp
eggs 2
oil 1 tbsp
soy sauce 1 tbsp
sesame oil 1 tsp
scallions, sliced 2
Sesame seeds (optional) to taste
Method
1 HEATHeat oil in a skillet over medium-high.
2 ADDAdd kimchi and stir-fry 2 minutes; add kimchi juice if using.
3 ADDAdd rice and break up clumps; cook 3–4 minutes.
4 STIRStir in soy sauce and sesame oil.
5 PUSHPush rice to one side; scramble eggs in the empty space, then mix in.
6 TOPTop with scallions and sesame seeds.

  • 2 tbsp kimchi juice (optional)
  • 2 eggs
  • 1 tbsp oil
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 scallions, sliced
  • to taste Sesame seeds (optional)

Method

  1. Heat oil in a skillet over medium-high.
  2. Add kimchi and stir-fry 2 minutes; add kimchi juice if using.
  3. Add rice and break up clumps; cook 3–4 minutes.
  4. Stir in soy sauce and sesame oil.
  5. Push rice to one side; scramble eggs in the empty space, then mix in.
  6. Top with scallions and sesame seeds.
