One-Pot Creamy Parmesan Orzo
Reserve pasta water; it's the secret to glossy sauces.
Ingredients
- 1 tbsp olive oil
- 1/2 onion, diced
- 2 cloves garlic
- 1 1/2 cups orzo
- 4 cups broth
- 1/2 cup cream
- 3/4 cup grated Parmesan
- 1 tsp salt
- to taste Black pepper
- to taste Spinach (optional)
Method
- Sauté onion in oil 4 minutes; add garlic 30 seconds.
- Stir in orzo and broth; simmer, stirring, 10–12 minutes until tender.
- Stir in cream and Parmesan; season.
- Fold in spinach to wilt if using.
