One-Pot Tomato Orzo with Spinach
A delicious one-pot tomato orzo with recipe
Ingredients
- 1 tbsp olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups orzo
- 1 can / (1/4 oz) crushed tomatoes
- 3 cups broth
- 1 tsp salt
- 2 cups spinach
- 1/2 cup Parmesan
Method
- Sauté onion in oil 4 minutes; add garlic 30 seconds.
- Stir in orzo; add tomatoes, broth, and salt; simmer 10–12 minutes, stirring.
- Fold in spinach to wilt; stir in Parmesan.
- Serve warm.
