Paella-Style Rice (Easy)
For rice dishes, rinse rice for fluffier texture unless making risotto.

onion, diced 1
garlic 2 cloves
smoked paprika 1 tsp
saffron (optional) 1/2 tsp
short-grain rice 2 cups
broth 4 cups
peas 1 cup
bell pepper, sliced 1
shrimp (optional) 12 oz
salt 1 tsp
Lemon to taste
Method
1 SAUTÉSauté onion in oil 5 minutes; add garlic and paprika 30 seconds.
2 ADDAdd rice and broth (and saffron); simmer 20 minutes without stirring much.
3 ADDAdd peas and pepper for last 5 minutes; add shrimp on top and cook until pink.
4 SEASONSeason and serve with lemon.
