Pineapple Fried Rice
A delicious pineapple fried rice recipe
Ingredients
- 3 cups day-old cooked rice
- 1 cup diced pineapple
- 1 cup mixed vegetables
- 2 eggs
- 2 tbsp soy sauce
- 1 tsp curry powder (optional)
- 1 tbsp oil
- 1 tsp sesame oil
- to taste Roasted cashews (optional)
- to taste Scallions
Method
- Scramble eggs in oil; remove.
- Stir-fry vegetables 2 minutes; add pineapple 1 minute.
- Add rice and cook 3 minutes, breaking up clumps.
- Add soy sauce, sesame oil, and curry powder if using.
- Return eggs; toss. Top with cashews and scallions.
