onion, diced 1
garlic 3 cloves
ginger 1 tbsp
curry powder 1 tbsp
turmeric 1 tsp
salt 1 tsp
red lentils, rinsed 1 1/2 cups
broth or water 4 cups
diced tomatoes (optional) 1 can
Lemon and cilantro to taste
Method
1 SAUTÉSauté onion 6 minutes; add garlic and ginger 30 seconds.
2 ADDAdd spices; cook 30 seconds.
3 ADDAdd lentils and liquid (and tomatoes if using); simmer 18–22 minutes until soft.
4 SEASON;Season; finish with lemon and cilantro.
