Shepherd's Pie

potatoes, peeled and cubed 2 lb
butter 3 tbsp
milk 1/3 cup
salt 1 tsp
oil 1 tbsp
onion, diced 1
carrots, diced 2
ground lamb or beef 1 lb
salt 1 tsp
Black pepper to taste
tomato paste 2 tbsp
broth 1 cup
frozen peas 1 cup
Method
1 BOILBoil potatoes until tender; mash with butter, milk, and salt.
2 BROWNBrown meat with onion and carrots in oil; season.
3 STIRStir in tomato paste; add broth and simmer 5 minutes; stir in peas.
4 SPREADSpread filling in a baking dish; top with mashed potatoes.
5 BAKEBake 400°F for 20 minutes until browned.
