Shepherd's Pie
Casseroles are great for meal prep—cool, then refrigerate for up to 4 days.
Ingredients
- 2 lb potatoes, peeled and cubed
- 3 tbsp butter
- 1/3 cup milk
- 1 tsp salt
- 1 tbsp oil
- 1 onion, diced
- 2 carrots, diced
- 1 lb ground lamb or beef
- 1 tsp salt
- to taste Black pepper
- 2 tbsp tomato paste
- 1 cup broth
- 1 cup frozen peas
Method
- Boil potatoes until tender; mash with butter, milk, and salt.
- Brown meat with onion and carrots in oil; season.
- Stir in tomato paste; add broth and simmer 5 minutes; stir in peas.
- Spread filling in a baking dish; top with mashed potatoes.
- Bake 400°F for 20 minutes until browned.
