Spaghetti Aglio e Olio
Reserve pasta water; it's the secret to glossy sauces.
Ingredients
- 12 oz spaghetti
- 1/3 cup olive oil
- 6 cloves garlic, thinly sliced
- 1/2 tsp chili flakes
- 1 tsp salt
- 2 tbsp chopped parsley
- to taste Grated Parmesan (optional)
Method
- Cook pasta in salted water; reserve 1 cup pasta water.
- Gently sizzle garlic in olive oil over medium-low until pale gold (do not brown). Stir in chili flakes.
- Toss pasta with garlic oil, a splash of pasta water, and parsley.
- Season and serve (Parmesan optional).
