Spaghetti Carbonara (Easy)

pancetta or bacon, diced 4 oz
eggs + 1 yolk 2
grated Parmesan or Pecorino 1 cup
Black pepper to taste
salt 1 tsp
Method
1 COOKCook pasta; reserve 1 cup pasta water.
2 CRISPCrisp pancetta; remove pan from heat.
3 WHISKWhisk eggs with cheese and lots of black pepper.
4 TOSSToss hot pasta with pancetta; off heat, add egg-cheese mixture, loosening with pasta water to make a silky sauce.
