Spaghetti Carbonara (Easy)
Reserve pasta water; it's the secret to glossy sauces.
Ingredients
- 12 oz spaghetti
- 4 oz pancetta or bacon, diced
- 2 eggs + 1 yolk
- 1 cup grated Parmesan or Pecorino
- to taste Black pepper
- 1 tsp salt
Method
- Cook pasta; reserve 1 cup pasta water.
- Crisp pancetta; remove pan from heat.
- Whisk eggs with cheese and lots of black pepper.
- Toss hot pasta with pancetta; off heat, add egg-cheese mixture, loosening with pasta water to make a silky sauce.
