Stuffed Bell Peppers
For extra flavor, add 1 tsp smoked paprika to the filling.
Ingredients
- 6 bell peppers, tops removed and seeded
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef (or turkey)
- 1 tsp salt
- 1 tsp Italian seasoning
- 1 cup cooked rice
- 1 cup marinara sauce
- 1 cup shredded mozzarella
- 2 tbsp chopped parsley
Method
- Heat oven to 375°F.
- Sauté onion in olive oil 5 minutes; add garlic 30 seconds.
- Brown meat; season with salt and Italian seasoning.
- Stir in cooked rice and marinara; simmer 2 minutes.
- Fill peppers; place in a baking dish with a splash of water; cover with foil.
- Bake 30 minutes; uncover, top with mozzarella, and bake 10–15 minutes more. Finish with parsley.
