Stuffed Bell Peppers

olive oil 1 tbsp
onion, diced 1
garlic, minced 2 cloves
ground beef (or turkey) 1 lb
salt 1 tsp
Italian seasoning 1 tsp
cooked rice 1 cup
marinara sauce 1 cup
shredded mozzarella 1 cup
chopped parsley 2 tbsp
Method
1 HEATHeat oven to 375°F.
2 SAUTÉSauté onion in olive oil 5 minutes; add garlic 30 seconds.
3 BROWNBrown meat; season with salt and Italian seasoning.
4 STIRStir in cooked rice and marinara; simmer 2 minutes.
5 FILLFill peppers; place in a baking dish with a splash of water; cover with foil.
6 BAKEBake 30 minutes; uncover, top with mozzarella, and bake 10–15 minutes more. Finish with parsley.

  • 2 cloves garlic, minced

  • 1 cup cooked rice
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • 2 tbsp chopped parsley
