Swedish Meatballs (Quick)
Mix gently—overmixing makes meatballs tough.
Ingredients
- 1 lb ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 2 tbsp chopped parsley
- 1 tsp salt
- to taste Black pepper
- 1 tbsp olive oil (for browning)
- 2 tbsp butter
- 2 tbsp flour
- 2 cups beef broth
- 1/2 cup cream
- 1 tsp Dijon
- 1/2 tsp salt
Method
- Heat oven to 425°F. Line a baking sheet with parchment.
- Mix meat, breadcrumbs, egg, Parmesan, garlic, parsley, salt, and pepper until just combined.
- Roll into 16 meatballs and place on the sheet.
- Bake 15–18 minutes until cooked through.
- Make gravy: melt butter, whisk in flour 1 minute.
- Whisk in broth; simmer until thickened; stir in cream and Dijon; season.
- Add meatballs and simmer 5 minutes; serve over mashed potatoes.
