Teriyaki Meatballs

ground beef (or turkey) 1 lb
breadcrumbs 1/2 cup
egg 1
grated Parmesan 1/4 cup
garlic, minced 2 cloves
chopped parsley 2 tbsp
salt 1 tsp
Black pepper to taste
olive oil (for browning) 1 tbsp
Sauce: 1/3 cup soy sauce + 2 tbsp brown sugar + 2 tbsp rice vinegar + 1 tsp ginger + 2 cloves garlic to taste
Slurry: 1 tsp cornstarch + 2 tbsp water to taste
Sesame seeds and scallions to taste
Method
1 HEATHeat oven to 425°F. Line a baking sheet with parchment.
2 MIXMix meat, breadcrumbs, egg, Parmesan, garlic, parsley, salt, and pepper until just combined.
3 ROLLRoll into 16 meatballs and place on the sheet.
4 BAKEBake 15–18 minutes until cooked through.
5 SIMMERSimmer sauce 2 minutes; thicken with slurry.
6 ADDAdd meatballs; coat; garnish with sesame and scallions.
