Teriyaki Meatballs
Mix gently—overmixing makes meatballs tough.
Ingredients
- 1 lb ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 2 tbsp chopped parsley
- 1 tsp salt
- to taste Black pepper
- 1 tbsp olive oil (for browning)
- to taste Sauce: 1/3 cup soy sauce + 2 tbsp brown sugar + 2 tbsp rice vinegar + 1 tsp ginger + 2 cloves garlic
- to taste Slurry: 1 tsp cornstarch + 2 tbsp water
- to taste Sesame seeds and scallions
Method
- Heat oven to 425°F. Line a baking sheet with parchment.
- Mix meat, breadcrumbs, egg, Parmesan, garlic, parsley, salt, and pepper until just combined.
- Roll into 16 meatballs and place on the sheet.
- Bake 15–18 minutes until cooked through.
- Simmer sauce 2 minutes; thicken with slurry.
- Add meatballs; coat; garnish with sesame and scallions.
