Tofu Stir-Fry (Sesame Ginger Sauce) with Broccoli

extra-firm tofu, cubed 1/4 oz
cornstarch 1 tbsp
soy sauce 1 tbsp
oil 1 tbsp
broccoli florets 4 cups
water 1/2 cup
garlic, minced 2 cloves
grated ginger (optional) 1 tbsp
Sauce: 1/4 cup soy sauce + 2 tbsp honey + 2 tbsp rice vinegar + 1 tbsp grated ginger + 1 tsp sesame oil to taste
Slurry: 1 tsp cornstarch + 2 tbsp water to taste
Steamed rice, for serving to taste
Sesame seeds and scallions, for garnish (optional) to taste
Method
1 TOSSToss tofu with soy sauce and cornstarch.
2 STIR-FRYStir-fry tofu in oil until golden, 6–8 minutes; remove to a plate.
3 INIn the same pan, add garlic (and ginger) and cook 15 seconds.
4 ADDAdd broccoli and water; cover 2 minutes to steam, then uncover and stir-fry 2 minutes.

6 SIMMERSimmer sauce 1 minute; thicken with slurry.
7 RETURNReturn protein to the pan and toss to coat.
8 SERVEServe over rice; garnish with sesame seeds and scallions.
