White Chicken Chili
For a thicker chili, mash 1/2 cup of beans before adding them to the pot.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp chili powder
- 2 cans / (15 oz) white beans, drained and rinsed
- 1 can / (4 oz) diced green chiles
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 4 oz cream cheese, cubed
- 1/2 tsp salt (plus more to taste)
- to taste Black pepper to taste
- to taste Juice of 1 lime
- to taste Cilantro, tortilla chips, and shredded cheese for serving
Method
- Sauté onion in olive oil over medium heat until soft, 5–6 minutes.
- Add garlic and spices; cook 30 seconds until fragrant.
- Add beans, green chiles, broth, and chicken; simmer 15 minutes.
- Stir in cream cheese until melted and creamy.
- Season with salt, pepper, and lime juice.
- Serve with cilantro, cheese, and chips.
