White Chicken Chili
For a thicker chili, mash 1/2 cup of beans before adding them to the pot.

olive oil 1 tbsp
onion, diced 1
garlic, minced 3 cloves
ground cumin 1 tsp
dried oregano 1 tsp
chili powder 1/2 tsp
white beans, drained and rinsed 2 cans / (15 oz)
diced green chiles 1 can / (4 oz)
chicken broth 4 cups
cooked shredded chicken 2 cups
cream cheese, cubed 4 oz
salt (plus more to taste) 1/2 tsp
Black pepper to taste to taste
Juice of 1 lime to taste
Cilantro, tortilla chips, and shredded cheese for serving to taste
Method
1 SAUTÉSauté onion in olive oil over medium heat until soft, 5–6 minutes.
2 ADDAdd garlic and spices; cook 30 seconds until fragrant.
3 ADDAdd beans, green chiles, broth, and chicken; simmer 15 minutes.
4 STIRStir in cream cheese until melted and creamy.
5 SEASONSeason with salt, pepper, and lime juice.
6 SERVEServe with cilantro, cheese, and chips.
