Tomato Sauce I. (without Stock).

Ingredients

  • ½ can tomatoes or 1¾ cups fresh stewed tomatoes.
  • 1 slice onion.
  • 3 tablespoons butter.
  • 2½ tablespoons flour.
  • ¼ teaspoon salt.
  • ⅛ teaspoon pepper.

Method

  1. Cook onion with tomatoes fifteen minutes, rub through
  2. a strainer, and add to butter and flour (to which seasonings
  3. have been added) cooked together.
  4. If tomatoes are very
  5. acid, add a few grains of soda.
  6. ½ can tomatoes.
  7. 2 teaspoons sugar.
  8. 8 peppercorns.
  9. Bit of bay leaf.
