Barley Water.

Ingredients

  • 3 tablespoons barley.
  • 4 cups cold water.
  • Sugar.
  • Salt.
  • Lemon juice.

Method

  1. Pick over barley and soak in water over night, or for several hours.
  2. Boil gently one and one-half hours.
  3. Strain; season with salt, lemon juice, and sugar.
  4. Reheat and serve.
  5. 2 tablespoons rice.
  6. 2 cups cold water.
